Ingredients
2 salmon fillets
4 medium-sized potatoes, peeled and diced
1 cup passionfruit pulp
2 tablespoons olive oil
Salt and pepper to taste
Chopped fresh parsley for garnish
Directions
- Boil the diced potatoes in salted water until tender. Drain and mash them thoroughly, adding a tablespoon of olive oil to achieve a creamy consistency. Season with salt and pepper to taste.
- Season the salmon fillets with salt and pepper.
- In a skillet, heat the remaining olive oil over medium-high heat. Add the salmon fillets and cook for about 3-4 minutes on each side, or until cooked through and lightly browned.
