Ingredients
2 Pounds Gold Yukon Potatoes peeled and cut into chunks
4 Garlic Cloves
1 Tablespoon of butter
1 Egg Free Range Yolk
Dash of Milk
½ cup Vegetable broth
Salt & Pepper
Fine Chopped Chives to Garnish
Directions
- Boil a large pot of salted water, add potatoes and garlic, and cover, cook for 16-20 min until potatoes are tender.
- Drain and add milk, butter, and vegetable broth in a mixing bowl and mash with electric beaters or masher. Let cool down slightly then beat Egg Yolk in a small cup, (save the egg white for breakfast) pour onto the mixture, and mix very quickly avoiding the yolk from hardening.
